Oyaki is one of local food of Nagano. It is a Japanese-style steamed or baked bun made from wheat flour, which wraps stuffing such as vegetables. Typical ingredients are Nozawana pickles, egg plants, sweet beans, pumpkins etc. If you drop in Oyaki shops on the street, you cannot easily decide what to buy because of too many selections according to seasons. In Shinshu surrounded by mountains and covered with snow, wheat or buckwheat cultivation developed in place of growing rice. Under such conditions, Oyaki was invented as meals or snacks to be consumed every day at home. Such Oyaki culture varied in different villages. For example, in Sakae-mura village, “Anbo” made from rice flour was Oyaki. In Minamisaku, “Kashiwappa rice cake” wrapped by Kashiwa oak leaves was their version. In Kawakami-mura village, “Harikoshi-manju” was Oyaki made from buckwheat flour. And such Oyaki culture has been handed down through generations.
