In Shizuoka, Hamamatsu and Mishima are famous for their eel dishes. In Hamamatsu, cultivation of eels in Lake Hamana dates back to the end of 1800s.The area is proud to have many long-standing eel restaurants with 100-year-old history. You can enjoy eels there both in Kanto and Kansai styles. Kanto style means to cut an eel open from its back and cook it after steaming it with less sweet sauce, and Kansai version prepares a crispy-grilled eel which is open from the belly side with sweeter sauce. In Mishima, there are a lot of natural springs comprised of molten snow coming from Mt. Fuji. And eels are put in natural water for a couple of days to get rid of bad odor and extra oil. The flavor of such eels is renowned among food connoisseurs in Kanto area. Eel-only restaurants or other restaurants having special eel dishes in Mishima city can be found in lanes called “The eels”.
