Omi beef is one of the three most famous kinds of beef in Japan. It has long history of production; documents say that in the Edo period (1603-1867) the Hikone feudal domain government attempted to preserve beef in Miso (soy-bean paste) or produce dried beef as a medicine, and presented it to Shogun. It is a cow with black hair produced by crossbreeding Japanese and non-Japanese stock, raised in Shiga Prefecture for the longest period with abundant water and a rich natural environment, and the beef has a high rate of marbled part with fat in the form of a fine mesh. You can enjoy its rich flavor and soft smooth texture as if melting in your mouth. It is the true charm of tourism in Shiga Prefecture to taste Omi beef as beef steak, shabu-shabu, or sukiyaki.
