Sushi chefs in Toyama make sushi with extremely fresh and seasonal fish from the Toyama Bay. Thanks to the warm currents and cold currents flowing into the Toyama Bay, as many as about 500 species of fish inhabit in the bay. As fishing ports are quite close to fishing grounds, unloaded fish can immediately be supplied to the market as if brought from preserves. Toyama-wan zushi is made with the ultra-fresh fish and the tasty rice produced in Toyama Prefecture, a famous rice harvesting area. Those sushi restaurants in the prefecture, which are participating in this campaign, serve “The set menu of Toyama-wan zushi” with 10 pieces of sushi in different styles.
