Azumino city, where melted water from snow of Northern Alps converges as undercurrent, has been successfully leading “water-grown wasabi” since the Taisho Period (1812~1926). In the neighborhood of JR Hotaka station, wasabi fields or natural springs produce peaceful landscape, becoming a popular sight-seeing spot. Because the specialty, fresh wasabi, can be harvested through the year, you can buy it here and there in a wasabi shop in the city. For your home-coming gifts, processed wasabi which can be kept at room temperature will be recommended. There is another specialty called “wasabizuke or pickled wasabi” which are placed in sake lees after being shredded. You can find many shops specializing in the wasabizuke. Different shops have different approaches. In addition, there are other souvenir selections such as wasabi-flavored buckwheat noodles, wasabi-flavored konnyaku or konjak, and wasabi-flavored sea weed.
