A taste of luxury is “Buri-shabu”, boiled yellowtail. Natural yellowtail caught off the seas of Himi are rich in oil and as the rough waves and strong currents of the Japan Sea make them stronger, the meat is firmer. Served cut into thick fillets, boiled in a special soup, and eaten with Ponzu sauce, the rich taste of the yellowtail is further enhanced when eaten with a type of locally harvested seaweeds called wakame and nagaramo.
