Journey to Nagano is full of fun to encounter with different soba, or buckwheat noodles in different places. To name some, Togakushi-soba, Touji-soba, Sugagawa-soba, Zenkoji teramachi-soba, Sarashina-soba, Hegi-soba, Haya-soba, Sunki-soba, Gyojia-soba, Kurenai-soba etc. Likewise, there are so many versions. Each of them has its own tradition as local food, full of originality. Soba chef is willing to entertain visitors while showing their way of preparing hand-made soba made from local buckwheat and good water. In all the soba cultivating areas, “Soba festivals” are held in harvesting season from October to November, when visitors can taste freshness of harvested buckwheat. In those festivals, events such as a hands-on experience of making soba or a speed-eating contest of soba pleasurably go on.
